INOVASI PRODUK OLAHAN SUSU KERBAU RAWA (PUAN) MENJADI MINUMAN FERMENTASI

Abstract

ABSTRAK: Desa Bangsal merupakan salah satu desa penghasil susu kerbau rawa. Masyarakat Desa Bangsal lebih mengenalnya dengan istilah puan. Puan selain dikonsumsi secara langsung, juga dapat diolah menjadi berbagai produk makanan. Kelompok Usaha Desa Bangsal yang merupakan mitra kegiatan Program Kemitraan Masyarakat (PKM) mengolah puan menjadi makanan khas, diantaranya gulo puan, sagon puan dan tapel puan. Pada Kegiatan Program Kemitraan Stimulus (PKMS) sebelumnya tim fokus pada satu produk saja yaitu gulo puan dan berhasil membuat inovasi produk berupa permen caramel (Puan Candy). Kegiatan PKMS memberikan dampak positif, sehingga mitra menginginkan kegiatan serupa dapat dilakukan untuk produk mereka yang lain dikarenakan masyarakat luas kurang mengenal olahan puan lainya. Pada kegiatan PKM yang kembali didanai oleh Kementrian Riset dan Teknologi-Badan Riset dan Inovasi Nasional (Ristek-Brin), tim pelaksana menawarkan solusi permasalahan berupa pelatihan, workshop serta pembinaan kepada mitra terkait penciptaaan citra produk dengan meningkatkan kualitas produk serta menghasilkan jenis produk minuman fermentasi (Puan Yogurt) sebagai variasi produk. Produk minuman dipilih agar mitra memiliki pengetahuan serta keterampilan baru dalam mengolah puan tidak hanya berupa produk makanan saja. Setelah kegiatan PKM terlaksana, tim melakukan evaluasi melalui pemberian kuisioner. Berdasarkan data yang terkumpul dari mitra, demografinya adalah 25% berusia <50 tahun dan 75%nya berusia >50 tahun. Sedangkan berdasarkan jenjang pendidikanya 13% berpendidikan S1, 50% SMP dan 37% SD. Respon mitra menunjukkan setuju dan sangat setuju dengan adanya pelatihan pengemasan dan workshop pembuatan minuman fermentasi. Selain itu, mitra juga menyatakan mampu menggunakan alat pengemasan secara baik serta mampu membuat inovasi produk puan berupa minuman fermentasi.

ABSTRACT: Bangsal Village is one of the swamp buffalo milk-producing villages. The people of Bangsal Village are more familiar with the term puan. Puan apart from being consumed directly, can also be processed into various food products. The Bangsal Village Business Group, which is a partner of the Community Partnership Program, processes puan into special foods, including gulo puan, sagon puan and tapel puan. In the previous Stimulus Partnership Program activity, the team focused on just one product, namely gulo puan and succeeded in making product innovations in the form of caramel candy (Puan Candy). Stimulus Partnership Program activities have a positive impact. Furthermore, partners demand similar activities to be carried out for their other products because the wider community has not been familiar with other puan processed products. In the event of Community Partnership Program re-funded by the Ministry for Research and Technology- National Research and Innovation Agency (Ristek-Brin), the implementation team offers solutions to problems such as training, workshops and coaching to relevant partners, creating the image of the product by improving product quality and producing fermented beverages (Puan Yoghurt) as product variations. Beverage products are chosen in order to let partners have new knowledge and skills in processing puan, not only in the form of food products. After the Community Partnership Program activities were carried out, the team conducted an evaluation by giving out questionnaires. Based on data collected from partners, the demographic is 25% aged less than 50 years old and 75% aged more than 50 years old. Meanwhile, based on the level of education, 13% have a bachelor's degree, 50% have junior high school and 37% elementary school. The response of the partners showed that they agreed and strongly agreed with the packaging training and workshop for making fermented 145 D.Sartika, et.al beverages. In addition, partners also stated that they were able to use packaging equipment properly and were able to innovate puan's products in the form of fermented beverages.
